Truffles are commonly defined as the “gems of the table”. In fact this underground fungus (a.k.a. “mushroom”) lives in contact with and develops itself next to oak trees roots at 30 cm depth. The good development of a truffle relies mostly on its climatic environment. The truffles form underground during spring and reach their maturity after 7 to 10 months.
The extreme temperatures such as in hot summers or freezing winters can cause great damages to the truffle’s quality, and the region of origin is therefore crucial.
The most famous truffles comes from Perigord in France or Piedmont in Italy. With the help of trained dogs, truffles are hunted by men, then selected according to their quality, washed and finally brushed before consumption. In combination with other high quality products, truffles offer a specific taste and aroma to the final dish.
Thanks to their scarcity and mysterious tastes and aromas, truffles have become the most precious and powerful ingredient of a cook’s kitchen.

Within the preserved range, we propose the white truffle (Tuber Magnatum Pico), which is harvested from September to December; the black winter truffle (Tuber Melanosporum Vitt.), harvested from December to March, and the summer black truffle (Tuber Aestivum Vitt) which can be purchased preserved, infused in olive oil, or even already prepared in sauces for the convenience of chefs.
