Raclette is a Swiss semi-firm cows-milk cheese that is most famously used to make a Franco-Swiss dish. When Raclette cheese has been handled well at the creamery, it will have a dark beige rind, and the interior of the cheese will be creamy, without a granular texture. This cheese is ideal for many hot recipes: croquet-monsieur, hot sandwich, gratin etc.. And it can be considered as lactose free.
