Chicken & Cherry Tomatoes with Fusilli
Ingredients:

350 g Barilla Mini Fusilli
300 g Spinach
80 g Chicken breasts
80 g Cherry tomatoes
20 g Grated Parmigiano Reggiano
10 g Onion
120 ml Stock
1 tablespoons Chopped parsley
2 tablespoons Carapelli Extra-virgin olive oil
Kotanyi Sea Salt to taste
Kotanyi Pepper to taste

Preparation:

1. Chop the onion and brown it in the oil. Dice the chicken and add it to the onion, cook for a few minutes then pour on the stock.
2. Now add the tomatoes, after having skinned them and removed their seeds. Allow the ingredients to cook together for another 2 minutes. Scald the spinach in water for 1 minute. Drain it and place in a blender with a little of the water used to cook it plus the Parmigiano Reggiano. Blend together until a creamy mixture is formed then season to taste.
3. Cook the Mini Fusilli in lots of salted water, drain and stir in the chicken mixture. Spread the spinach sauce at the bottom of the serving plates, arrange helpings of pasta on top and sprinkle with the parsley to garnish.

Chef’s Note:
If you leave the chicken in boiling water for two minutes it will be easier to chop into cubes.
