Chocolate Cherry Tower (Valentine Day’s Cake)
Chocolate Short Cake
Ingredients:

220 g President Fine Butter
210 g Caster sugar
100 g Egg yolks
4 g Salt
100 g Valrhona Dark chocolate
280 g pastry flour
25 g baking powder
20 g DGF Cocoa powder

Preparation:

1. Slightly soften the butter, add the sugar and mix together.
2. One by one add the egg yolks then the slat.
3. Add the tepid melted chocolate.
4. Sift together the flour, baking powder and cocoa powder and add to the mixture.
5. Bake it in oven at 180c by 12—15 min.

Light Chocolate Mousseline Cream
Ingredients:

300 g Valrhona Dark Chocolate
270 g President Cream
600 g Whipping Cream
40 g President Butter

Preparation:

Boil the cream. Then add the melted dark chocolate. When the mixture has cooled to 30c-35c, add the butter and stir in the whipping.

Cherry Soft Biscuit
Ingredients:

250 g DGF Almond paste
90 g President Butter
20 g Flour
3 g Baking powder
15 g Corn flour
90 g Egg whites
60 g Sugar
160 g Cap’fruit IQF frozen cherry

Preparation:

1. Melt the butter and warm the almond paste, mixture it then the sifted flour, baking powder and corn flour.
2. Mix the egg whites and sugar whisk.
3. Spread out on baking sheet in frame.
4. Sprinkle with cherry pieces.
5. Bake at 200c for 12—15 minutes in an oven.
