Dough
Ingredients:

2.000 kg Bread flour
0.040 kg IREKS SOFT
0.060 kg IREKS WHEAT SOUR
0.030 kg Salt
0.120 kg Whey powder
0.160 kg Sugar
0.400 kg Butter fat
0.040 kg Instant yeast
1.100 kg Ice water

Preparation:

Mixing time: spiral, 2 minutes slow 7 minutes fast
Dough temperature: 26° C
Bulk fermentation: 20 minute
Scaling weight: 30 g
Baking temperature: 200 – 210 ° C
Baking time: 15 minute

Custard cream
Ingredients:

400 gr. Instant custard mix
1000 gr. Water

Preparation:

Mix together for 3 min. on high speed

Finish:

After bulk fermentation, scale the dough pieces and mould round.
Flat half of the buns put them on a baking tray and brush with oil. Flat the other half of the buns, shape like in the photo and make two eyes with a nuzzle. Put them together and add a little crumble on top. After baking, cool down, separate and fill with custard cream. Fill the eyes with jam, and dust the top with some powder sugar.
