Recipes

1 onion, chopped,
1 tbsp Carapelli olive oil,
1 tbsp Kotanyi curry seasoning,
1kg Japanese pumpkin,
250g Pauls Sour Light Cream,
200ml President Whole Milk
Kotanyi salt and pepper to taste,
chives for garnish
1. Add the oil and onion in a saucepan and cook until transparent.
2. Add the curry seasoning and cook for a further minute.
3. Add the pumpkin and milk, slowly bringing to a simmer.
4. Continue cooking until the pumpkin is tender. In a food processor, puree the soup mixture until smooth. Alternatively, if you like coarser texture you can squash the pumpkin with a fork instead.
5. Add salt and pepper to taste. Return the soup to the saucepan and reheat.
6. Pour into bowls, dollop a tablespoon of the sour cream into the centre of each bowl and garnish with chopped chives.
7. Either serving it cold and hot.
