0.300 kg Milk powder
0.800 kg Egg
0.160 kg Salt
0.270 kg Instant yeast
1.500 kg Sugar
1.500 kg Butter, add after half mixing time.

Lemon, vanilla, rum, cinnamon
4.500 kg Candied lemon & orange peel
4.000 kg Sultanas
Soaked in Rum & water 1 day before. Fold in at the end

The paste should be soft to pipe in the cross!
Mixing time: spiral, 2 minutes slow, 8 minutes fast
Dough temperature: 26° C
Bulk fermentation: 30 minutes
Scaling weight: 70 g
Baking temperature: 200° C
Baking time: 15 – 18 minutes, open damper
After the bulk fermentation, scale at desired weight, mould round and place on trays. Before loading wash with eggs, cut a cross and pipe the paste inside.
