Recipes

1 box Barilla Fettuccine
6 Salt-packed Anchovy Fillets
1/4 cup Milk
1/2 cup Breadcrumb
4 tablespoons Extra Virgin Olive Oil
1 Red Onion, Finely Chopped
4 cloves Garlic, Sliced Thin
1 pound Butternut Squash, Peeled, Seeded, Cut Into 1/2-inch Cubes
To taste Black Pepper, Freshly Ground
1/4 cup Fresh Italian Parsley, Finely Chopped
1. Bring a large pot of water to a boil.
2. Meanwhile, SOAK anchovy fillets in milk for 20 minutes. Remove from milk, rinse, drain and set aside.
3. TOAST bread crumbs in a dry skillet until lightly browned. Set aside.
4. HEAT 2 tablespoons of the olive oil in a large skillet over medium heat.
5. ADD the onion, garlic and anchovies. Cook over medium heat, stirring occasionally, until the onion and garlic are softened and the anchovies have begun to break up.
6. ADD the squash and turn the heat up to high. Cook for 5 minutes or until the cubes are tender and browned at the edges.
7. SEASON with the salt and pepper and remove from the heat.
8. COOK the Fettuccine for 1 minute less than according to the package directions. While the pasta is cooking, warm the squash mixture. Drain the pasta and add it to the skillet with the squash.
9. ADD the parley and remaining 2 tablespoons of olive oil and toss over high heat for 1 minute.
10. TRANSFER pasta to a serving bowl and top with bread crumbs. Serve immediately.
