Grès du Maquis Tarte Flambee with Fig Jam
Ingredients:

For 4 people:
Tarte Flambee dough:

12 g yeast
180 g of water
320 g flour (white)
5 g salt
2 g sugar
60 g sunflower oil

Topping:
200 g crème fraîche
Salt, pepper and nutmeg
160 g fig jam
200 g onions (cut in stripes)
100 g lean bacon salted
400 g Grès du Maquis

Preparation:

Prepare dough:
Dissolve the yeast in lukewarm water (30°C). Sieve the flour and add the salt and sugar. Add the water with the dissolved yeast and sunflower oil.
Knead until smooth. Cover and let dough rise in a warm place until the dough's size has doubled. Take the dough from the bowl and roll it out on a floured surface, preparing four very thin, round oval dough sheets.

Process:
Spread the crème fraîche on the dough sheets, season with salt, pepper and nutmeg. Then sprinkle the fig jam on top and cover with onions and bacon. Finally, add the Grès du Maquis in thin slices on top.

Bake the Grès du Maquis Tarte Flambee:
In the oven at 220°C with upper and lower heat for about 8 to 12 minutes until crispy.
