Mango Ice Cream
Ingredients:
1000 g Cap’Fruit Fruit’Puree mango
519 g President whole milk 3.5% fat
44 g Skimmed milk powder 0% fat
222 g Sugar
59 g Sevarome powdered glucose
4.4 g Sevarome ice cream stabilizer
44 g DGF inverted sugar
Preparation:
Recipe for 2 kg of ice cream
1. Heat milk to 50°C.
2. Stir in all dry ingredients: milk powdered, sugar, powdered glucose and stabilizer.
3. Mix well, then add invert sugar and cook to 85°C.
4. Pour this syrup onto the mango Fruit’Puree. Mix well, allow to cool and process in ice-cream machine.
