Ingredients:

1.500 kg Bread Flour
0.500 kg IREKS REX MILANO
0.020 kg IREKS SOFT
0.060 kg IREKS WHEAT SOUR
0.080 kg Sugar
0.120 kg Milk powder
0.080 kg Butter fat
0.020 kg Salt
0.020 kg Instant dry yeast
1.100 kg Ice water

Mixing time: spiral, 2 minutes slow 6 minutes fast
Dough temperature: 26° C
Bulk fermentation: 20 minute
Scaling weight: 30 g

Decoration: Egg, coloration.

Preparation:

1. Make a smooth dough, rest for 20 min. and scale into 30gr. Mould long.
2. Twine 3 pieces together and apply boiled eggs. Give sufficient final proof and bake for 15 min. by 210° C.
