Recipes

300g President unsalted butter, 200g icing sugar, 80g Ovodan egg yolks, 50g Ovodan whole eggs, 500g DGF flour T65, 50g whole hazelnuts powder.
1. Put softened President butter in the mixer.
2. Gradually add the icing sugar, Ovodan egg yolks and eggs.
3. Finish with the sifted DGF flour and hazelnut powder.
4. Put aside, cover with cling-wrap and let stand in the fridge for a minimum of 2 hours.
300g DGF white almond paste 50%, 50g icing sugar, 150g Ovodan eggs, 80g Ovodan egg whites, 150g Ovodan egg yolks, 4 Cap'Fruit orange zests, 100g President butter.
1. Mix the icing sugar with the DGF almond paste.
2. Gradually add the Ovodan eggs.
3. Add the Cap'Fruit orange zests and melted President butter.
4. Pour into the tart bases previously cooked blind.
5. Garnish with orange segments and cook at 180°C for 10 to 15 minutes.
375g President UHT cream 35 %, 50g DGF glucose syrup, 270g DGF dark chocolate Fondant de Confiseur (55%).
1. Bring the President cream and DGF glucose to the boil.
2. Pour over the DGF chocolate couverture.
3. Let it melt then mix.
4. Pour over the cooled tarts.
1. Mix the Ovodan egg yolks and sugar until white and creamy.
2. Cook with the orange juice and Cap'Fruit zests, bring to the boil for 2 minutes.
3. Add the hydrated gelatine.
4. At 45°C add the softened President butter and mix.
5. Pour into the DGF 331 nest mould of 200mm diameter and put in the freezer.
1. Cook the tart bases blind, garnish them with the orange fondant biscuit and the orange segments.
2. Cook again for 15 minutes at approximately 180°C.
3. When cool, garnish with the chocolate sauce. Finish with the orange cream. Cover the orange cream with DGF Instant Neutral Glaze.
4. Garnish the centres with orange segments.
5. Cover and decorate.
