Ingredients:

IREKS-4-KORN 10.000 kg
Instant yeast 0.100 kg
Water, approx. 5.600 l
Total weight 15.700 kg

Preparation:

Mixing time: spiral, 2 minutes slow, 6 minutes fast speed
Dough temperature: 26 - 27° C
Bulk fermentation time: 10 minutes
Scaling weight: 450 g
Intermediate proof: none
Final proof: 60 - 70 minutes
Baking temperature: 230° C, giving light steam, drop to 210° C
Baking time: 30 - 35 minutes

Finish:

Mix all ingredients into a developed dough and work off as loaf.

We recommend using following Topping:
ONLY using OKO-4-KORN mix or organic seeds.
