Potato - Délice des Crémiers espuma
Ingredients:

250 g floury potatoes
100 ml potato water
200 g Fromi Délice des Crémiers
50 ml cream
Season with salt, Cayenne pepper, nutmeg

Preparation:

1. Wash and peel potatoes, cut into rough cubes. Cook until done in salt water and remove from water. Keep the potato water.
2. Pass the potatoes through the potato press, process with the rest of the ingredients and a whisk into a smooth mass. Season with salt, Cayenne pepper and nutmeg.
3. Pass the mass through a sieve and fill in a 0.5 l iSi bottle. Unscrew one cream cartridge, shake thoroughly. Keep warm in bain-marie at about 60 °C.

Note:
The liquid in the recipe can vary depending on the potato variety. You can used dried blue potatoes as decoration.
