Recipes

300g onions, sliced
2 tbsp Carapelli extra virgin olive oil
50ml white wine
1/2 tbsp crushed cumin seeds
10 crushed coriander seeds
10 dried tomatoes, salt, Kotanyi pepper
4 tbsp chopped hazelnuts
200g sliced Emmi Raclette cheese, 3 mm thick
150g puff pastry
1 egg yolk
1 tbsp President UHT cream
1. Steam onions in 1 tbsp olive oil, add wine, steam until crisp. Add spices and dried tomatoes, steam briefly, season with salt and pepper. Leave to cool.
2. Heat 2 tbsp of olive oil, add breadcrumbs, marjoram and hazelnuts, briefly roast, leave to cool.
3. Preheat oven to 200℃.
4. Roll out puff pastry to a band 10 cm wide, have horizontally. Separate in the middle. Lay 1 piece of pastry on a baking tray lined with baking paper. Sprinkle breadcrumbs in the middle and leave 15 mm free on each side. Distribute half of the onions onto the breadcrumbs, spread with Raclette cheese slices, season with pepper and spread the remaining onions on top. Fold the second band of pastry lengthways, cut back the pastry 1 cm deep leaving gaps of 2 cm. Beat egg yolk and cream, brush the edges of the pastry base, cover up with the cut band, firmly press down the edges.
5. Bake the Raclette chesse strudel at 200℃ for 30 minutes, leave to stand for 5 minutes. Serve warm.
