Recipes

16 Savoiardi (lady-finger biscuits) biscuits
500 g of strawberries
250 g of Santa Lucia mascarpone
50 g of sugar
3 eggs
10 cl of orange juice
100 g of red berry coulis
4 leaves of fresh mint
A pinch of salt
For 6 people
Preparation time: 20 mins.
Cooling time: 3 hrs.
1. Wash and cut the strawberries into fours. Separate the yolks from the egg whites. Mix the egg yolks with the sugar until it starts to turn white then add the mascarpone. Mix with an electric whisk for a few minutes, until the mixture becomes light and even.
2. Add a pinch of salt to the egg whites and beat until they form stiff peaks then fold into the mixture, along with the fresh mint. Dip the lady fingers in the orange juice and arrange them at the bottom of a transparent dish.
3. Decorate the side of the dish with the strawberries and cover the biscuits with any remaining fruit. Pour the mixture over the strawberries and then refrigerate for at least 3 hours. Before serving, drizzle the red berry coulis over the Tiramisu.
