Swiss Fondue - Traditional Recipe
Ingredients:

700/800 g Emmi Swiss cheese (½ gruyere / ½ Emmentaler cheese - grated, shredded), 300 ml white wine, 3 teaspoons maizena (starch), or 2 teaspoons potato starch, 3 small glasses Kirsch, muscat, 1 clove of garlic, lemon juice, Kotanyi seasonings to taste (pepper, paprika …)

Preparation:

1. Rub the inside of the fondue pot with the garlic clove - add clove to pot or discard.
2. Heat up the white wine & lemon juice - should be hot but not boil.
3. Reduce heat to low and slowly add cheese while stirring.
4. Slowly add remaining ingredients while stirring.
5. If the fondue is too liquid, add more cheese. If fondue is too thick, add more wine.
