Recipes

Pesto for tartare:
20 g pine nuts
Peppermint leaves
35 g acacia honey
50 ml olive oil
10 ml lime juice
400 g Abate pears
480 g Mont d’Or AOP
50 ml white wine
Prepare the pears tartare:
1. Dry roast the pine nuts in a pan until golden brown and chop.
2. Using a handheld blender, finely puree the mint leaves, acacia honey, olive oil and lime juice. Add the roasted pine nuts and stir in. Peel the pears, halve them and remove the cores. First slice the pears thinly (approx. 2 mm) and then cut into 2 mm juliennes.
3. Lastly, chop the juliennes into small dice and add to the pesto, mixing thoroughly.
Prepare the Vacherin Mont d´Or:
Pre-heat the oven to 160°C, fan setting. Leave the cheese in its box and wrap in aluminium foil. Pierce the rind several times with a fork and pour the white wine over. Put in the oven for approx. 15 - 20 minutes.
Serve:
Arrange the pears tartare in deep dishes. Take the cheese out of the oven and spoon out of the box over the tartare. Serve with boiled new potatoes.
