Cap'Fruit Workshop in Shanghai and Beijing
Last month, we welcomed our partner Cap'Fruit to conduct two Regional Pastry Workshops for the thriving pastry chain 85°C and the famous Shangri La Hotels Group.
Master Pastry Chef David Ducamp, consultant for Cap'Fruit, presented a great mix of flavors in several new recipes: from entremets, tarts and verrines to fruity caramel and fruit jellies. He also took the chance to prepare a few Easter recipes, with a cute "Rabbit" touch.

Bouillabaisse
Ingredients: 1 packet of fish fillets, 300 g shellfish, 1 packet Kotányi chicken seasoning, 150 g onions, chopped finely, 6 tbsp olive oil, 1 lt water or fish stock, 200 ml dry white wine, 200 g potatoes, diced, Kotanyi garlic granules, 3 tbsp tomato puree
Preparation:
1. Heat the olive oil and sweat the onions until soft. Add potatoes and tomato puree, stir in the white wine, and add the water.
2. Add about half a packet of chicken seasoning to taste, and leave to simmer for about 15 minutes...
