up in 2001, Carapelli Nutritional Institute is
involved in research
on olive oil
in all its aspects: chemical, organoleptic, agronomical, technological,
historical, pharmacological, biochemical and nutritional. The
mission is to study, maintain and emphasize the nutritional properties
of olives, including minor components, which are considered capable
of protecting the human body against degenerative diseases.
Carapelli Nutritional Institute aims at being the centre and promoter
of such research, with diffusion abroad: to the scientific community,
the schools and the consumers, in order to better spread a wider
alimentary culture and more proper nutrition. Since its foundation,
more than a hundred years ago, research has been the heart of
Carapelli Firenze, a company dedicated to extra virgin olive oil
specialization and improvement.
